In this industry there are certain measurements that are "standard".  That's fine if you are "standard" but if you are taller or shorter than "standard" it makes sense to alter the height of your cabinetry.  This is easy to do and can make the world of difference when you are working in the kitchen, using the bathroom vanity or sitting at your desk.  By adding or shortening by as little as 10 - 20mm can make the world of difference - no more aching back from bending over the "standard" kitchen sink because you asked for your kitchen bench to be built a little higher.  The same applies to your bathroom.
